Ceylon Cinnamon, known as True Cinnamon, is lighter in colour with a delicate, refined flavour, compared with the stronger, sometimes bitter taste of cassia. It is also naturally lower in coumarin. See the full comparison.

Alba is the finest and most expensive grade of Ceylon Cinnamon. Grading is based on the diameter of the quill, and Alba quills are the thinnest, roughly pencil-thin. Alba is rare, light golden-brown and known for its refined flavour.

It means we start with Alba-grade cinnamon, the highest grade, and use the outer layer of those quills in our products.

Ceylon Cinnamon is grouped into four categories by quill diameter: Alba, Continental, Mexican and Hamburg. Alba is the finest. Within Continental there are sub-grades such as C5 Special, C5 and C4.

Quillings are broken pieces created during baling, sorted by size into No.1, No.2 and No.3, with No.1 the largest pieces.

Steep 1–2 teaspoons of loose-leaf brew, or one pyramid tea bag, in 250ml of freshly boiled water for 3–5 minutes. Golden Brew and Oxi Brew are also good with milk.

Alba Brew and Ayu Brew are naturally caffeine-free. Golden Brew and Oxi Brew contain Premium Ceylon Tea. Compare the brews.

In a cool, dry place away from direct sunlight. Keep it in the sealed jar or tin, or an airtight container, to protect the aroma.
